Ingredients

  • 3 Tbsp. neutral oil
  • 1 large shallot or 1 medium red onion
  • 3 Cloves Garlic finely chopped
  • 1/2 to 3/4 Cup Vodka of your choice, I use New Amsterdam
  • 6oz. tomato paste
  • ~3/4C. Whole Milk/Cream.
  • ~5oz of parmessean cheese (any good cooking cheese will work) shredded.
  • 2tbsp. granulated sugar
  • 1/2 cup beef stock
  • 4 oz. white mushrooms slices
  • 4 small sweet bell peppers

Cooking Instructions

  1. Dice shallot / red onion, mince garlic, chop red peppers
  2. Over medium heat add onion, garlic, peppers, and mushroom slices until onion starts to become translucent
  3. If cooking pasta, start to boil your water now, and add the pasta
  4. Add in tomato paste, and vodka once your onions have started carmelizing.
  5. Stir until it has begun rendering down
  6. Add in milk and beef stock and keep stirring, and then add sugar.
  7. As it starts to simmer, add cheese. Do not let it boil, stir to avoid burning.
