Ingredients

  • 1 lb. bacon
  • 1 Large onion
  • 3 cloves garlic
  • 1 tbsp. salt
  • 1 tbsp. paprika
  • 1/2 tbsp. pepper
  • 3 cups chicken broth
  • 4 red dried peppers
  • 1 pound fresh collard greens

Cooking Instructions

  1. Fry the bacon until crispy. Remove and set aside. Save the bacon grease!
  2. While the bacon is fryin, mince onion, and garlic. Cut collard greens into 2 inch pieces. (rough cut, toss the bottom stems, or use to make a veggie broth.) Cut the red peppers into small pieces.
  3. Place onion into the bacon grease to fry until it starts to brown and become translucent.
  4. Add garlic to pan until it becomes fragrent (about a minute.)
  5. Add collard greens and bacon crumbled bacon. Fry the greens until they start to wilt. (2-3 minutes give or take.)
  6. Add in the broth, salt, paprika, pepper, and red peppers. Heat to a simmer.
  7. Allow to simmer 45 minutes, or until greens are tender.
