Mix 1 cup of the flour, and all of the baking soda, salt, paprika, pepper, hot sauce, flour, sugar, eggs, beer, and any other seasonings in a bowl. Mix until a smooth but easily dripping consistency.
Set the remaining half cup of flour to the side.
Heat up oil to a temperature of 375 F.
Cut your fish into fillet strips. Dry it off well with paper towel.
Coat in flour lightly (enough to have a thin layer, not a full batter)
Dredge the fish in the batter (it’s okay if there are spots that aren’t covered, it’s going to get fluffy and flaky)
Place the fish into the oil. Cook until it reaches about 165 F. internally. (about four minutes. It should be golden brown on the outside as well.)
Remove and pat dry, serve with a squeeze of lemon juice, vinegar, and tartar sauce.
